Turbots are flatfishes that are popular amongst chefs. Caught in the shallow inshore waters of the Norwegian Sea, it is a rare species that is worth every penny.

 

Our favourite recipe for this fish is simply to steam it with ginger, season with soy sauce and add some ginger and scallion strips over its tender flesh!
